Okay, busy parents, let’s talk holiday meals that don’t take over your entire weekend. Sometimes you want something special, but you just don’t have hours to babysit an oven. That’s exactly why I’ve been perfecting this amazing air fryer rolled turkey breast recipe, and I’m so excited to share it with you!

This dish feels fancy, but honestly, it comes together without a ton of fuss, especially if you do a little prep ahead of time. You get that gorgeous, golden skin and perfectly juicy turkey, all wrapped around a flavorful stuffing that everyone will love. I’ve tested this more times than I can count to make sure it’s foolproof for your family dinner.

Mastering the Stuffing and Rolling

The heart of this air fryer rolled turkey breast is definitely the stuffing! I love the mix of sweet cranberries, savory sausage, and the subtle crunch from pistachios. When you’re making it, really get your hands in there to combine everything evenly. The onion and rosemary need to be super soft first – that’s where a lot of the depth of flavor comes from. Let that mixture cool down before adding the other ingredients, otherwise, you’ll start cooking the egg and sausage too soon. Don’t skip flattening the turkey! It helps you get a nice, even roll, which means it cooks more consistently. And when you’re rolling, aim for tight – the tighter the roll, the better it holds its shape and keeps the stuffing snug inside. Using the bacon lattice is a pro move; it keeps everything moist and adds incredible crispiness. Stretching the bacon slightly with the back of a knife makes it more pliable and easier to weave into that beautiful pattern.

Perfecting Your Air Fryer Rolled Turkey Breast

The air fryer truly shines with this recipe! It gives you that perfectly golden, crispy bacon skin all around the turkey without drying out the inside. The key to a perfectly cooked air fryer rolled turkey breast is monitoring the internal temperature. A probe thermometer is your best friend here. Don’t just guess! Aim for 70°C (160°F) in the thickest part. If it needs a little more time, just pop it back in and check every 10 minutes. Every air fryer is a little different, so listening to your thermometer is crucial. And please, please, let your turkey rest! This is non-negotiable for juicy meat. As it rests, the juices redistribute, ensuring every slice is tender and moist. While it’s resting, your air fryer is free to cook those bonus stuffing balls until they’re golden and delicious. Two birds, one air fryer!

Serving and Enjoying Your Festive Meal

Once rested, removing the string is super easy, and then you’re ready to slice! The cross-section of this turkey roll is just beautiful with all the colors of the stuffing. It really makes for a show-stopping presentation without all the fuss of a traditional whole turkey. I like to arrange the slices on a big platter with the golden stuffing balls around it, garnished with fresh rosemary sprigs to make it extra special. This dish is fantastic for a smaller holiday gathering, a special Sunday dinner, or even when you just want a really tasty meal that feels a bit celebratory. The leftovers are pretty great too, especially in sandwiches!

Why This Recipe Works

The air fryer cooks the turkey breast quickly and efficiently, creating a wonderfully crisp bacon crust while keeping the turkey moist and juicy inside. The bacon acts as a protective layer, basting the turkey as it cooks. The stuffing adds incredible flavor and prevents the turkey from drying out.

This air fryer turkey roll brings all the festive feels without the holiday kitchen stress. So good!— Charlotte

Prep 45Cook 80Yield 8 servings
Ingredients
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 4 rosemary sprigs, needles picked and finely chopped (plus extra to serve)
  • 100g shelled pistachios, blitzed to crumbs
  • 150g breadcrumbs
  • 75g dried cranberries
  • 3 sausages (about 200g), meat squeezed from skins
  • large bunch flat-leaf parsley, leaves picked and finely chopped
  • 1 medium egg, beaten
  • 1.2kg skin-on boneless turkey breast, butterflied
  • 22 rashers streaky bacon
Instructions
  1. Make the Stuffing In a small pan, heat the olive oil over medium heat. Add the finely chopped onion and rosemary. Cover the pan and cook for about 15 minutes until the onion is super soft. Tip this mixture into a bowl and let it cool completely. Once cool, stir in the pistachio crumbs, breadcrumbs, dried cranberries, sausagemeat (straight from the casings!), chopped parsley, and the beaten egg. Mix it all up really well until combined.
  2. Prepare and Stuff the Turkey Place your butterflied turkey breast skin-side down on a cutting board. Cover it with baking parchment and use a mallet or a rolling pin to gently flatten it out. You want it to be an even thickness across the whole breast. Remove the parchment. Spoon most of your delicious stuffing down the middle of the flattened turkey breast. Carefully roll the turkey breast up around the stuffing, getting it as tight as you can to completely enclose the filling. If you have any stuffing leftover, roll it into small balls; we'll cook those later.
  3. Wrap with Bacon and Chill Lay a large sheet of baking parchment on your work surface. Arrange six pieces of kitchen string on top of the parchment, about 5cm apart, running parallel. Take one rasher of streaky bacon at a time and run the back of a knife over it to gently stretch and flatten it. Arrange the bacon rashers in a pretty lattice pattern over the kitchen string and parchment. Place your rolled turkey breast (skin-side down) on top of this bacon lattice. Pull the bacon rashers up and around the turkey breast until it's completely wrapped. Tie the kitchen string tightly to secure the roll. Now, pull the baking parchment up around the bacon-wrapped turkey, twisting the ends of the parchment to seal it like a big candy wrapper. Chill this in the fridge for at least 2 hours, or even up to 48 hours. This step is key for setting the shape and flavors!
  4. Air Fry the Turkey When you're ready to cook, preheat your air fryer to 180°C (350°F) for about 3 minutes. Remove the parchment from the turkey roll and carefully transfer it to your air fryer basket. Cook for 30 minutes, then use tongs to gently turn it over. Continue cooking for another 20 minutes. To be sure it's done, insert a probe thermometer into the thickest part of the roll; it should read 70°C (160°F). If it's not quite there, pop it back in for 10-minute intervals until it reaches temperature. Once cooked, take it out and let it rest on a cutting board for 20 minutes. Resting is so important for juicy meat!
  5. Cook Stuffing Balls and Serve While your turkey is resting, grab those leftover stuffing balls you made earlier. Pop them into the air fryer and cook for about 15 minutes until they're golden brown and cooked all the way through. Once the turkey has rested, remove the kitchen string. Slice your gorgeous air fryer rolled turkey breast into thick rounds and arrange them on a platter. Garnish with fresh rosemary sprigs and serve with the crispy stuffing balls. Enjoy!
Tested Tip

I found that chilling the turkey roll for at least 4 hours (or overnight!) makes a huge difference. It helps the turkey and bacon really hold their shape, so your roll looks neat and cooks evenly, plus the flavors meld beautifully.

Make It Yours

  • Herb Swaps — Instead of rosemary, try fresh sage or thyme in your stuffing. A mix of all three would be delicious too!
  • Nutty Alternatives — Not a pistachio fan? Swap them out for toasted pecans or walnuts for a different crunch and flavor profile.
  • Spice it Up — Add a pinch of cayenne pepper or a dash of smoked paprika to your stuffing mixture for a subtle warmth and a little kick.
  • Apple Infusion — Dice a small apple very finely and add it to the stuffing mix for an extra hint of sweetness and moisture.

FAQ

Can I make this ahead of time?

Absolutely! The beauty of this recipe is that you can assemble the entire turkey roll (up to the chilling step) up to 48 hours in advance. Just keep it tightly wrapped in the fridge, then air fry when you're ready to cook.

What if my air fryer is too small for the turkey roll?

Make sure to check the size of your turkey breast against your air fryer basket before you start. If it's too long, you might need to trim a small amount off the ends or even cut it into two shorter rolls, which would then need slightly less cooking time.

How do I know the turkey is cooked through?

The best way is to use a meat thermometer inserted into the thickest part of the turkey. It should read 70°C (160°F). Remember, it will continue to cook a little as it rests, so pulling it out just as it hits 160°F is perfect.

Can I use boneless, skinless turkey breast?

You could, but the skin-on, boneless breast really helps keep the turkey juicy and forms a better base for the bacon wrap. If you use skinless, you might want to add a bit more fat to the stuffing for moisture.
